Weekly Goals

It's been awhile since I've updated!

The baby came January 14, so I've been slightly preoccupied! He's just over a month old now and I plan on sharing my birth story this week.

I thought I'd start sharing my weekly goals.

Goals for this week:
  1. Exercise 3x this week
  2. Finish taxes
  3. Write 3 blog posts
  4. List 5 ideas for articles
  5. Deep clean bathroom
  6. Journal 3x 
  7. Organize coupons
  8. Drink at least 3 bottles of water a day
  9. Paint fingernails

Recipe: Easy Beef Stroganoff

I have been craving beef stroganoff so badly lately! I finally made it grocery shopping and included stroganoff in this weeks meal plan, it's a fairly cheap meal and so yummy.

Gather the ingredients

Chop up the onion and mushrooms and saute them until they are nice and soft. Now's also a good time to cook the noodles.

I like my mushrooms with a little bite left so I don't cook them extremely long. Cook them however you like, it's a personal preference. I threw some garlic in towards the end of cooking also. Everything is better with garlic.

After the beef is browned, toss in the flour and cook a minute. 

Add the beef broth. It will thicken up a bit after a few minutes.

Now, throw in the sour cream and mushroom/onion mixture. It will get thick and creamy and delicious. I added the salt and pepper at this time as well.

Mix with the noodles and devour. Well, I devoured it, you can just eat it like a normal person if you so desire.

Easy Beef Stroganoff

Ingredients
  • 1 12 oz pkg egg noodles
  • 8 oz fresh mushrooms
  • 1 medium onion, chopped
  • 1/4 cup butter
  • 1 TBSP garlic, minced
  • 1 1/2 lbs ground beef
  • 4 TBSP flour
  • 2 cups beef broth
  • 1 cup sour cream (I used light)
  • salt/pepper
Directions

Cook egg noodles as directed.

Cook mushrooms and onions in 2 TBSP of butter until soft. Add garlic towards end of cooking so
 it doesn't burn. Set aside.

Brown beef in same pan with remaining butter. Once browned, stir in flour and cook for 1 minute.

Stir in beef broth and let cook until slightly thickened. Return mushroom and onion mixture to 
sauce; stir in sour cream.

Season to taste with salt and pepper.

Serve over egg noodles.
